Bundtcakes are these very soft cakes that you see all over foodblogs, because their shape is so pretty. This cake was a revelation for me : lemon cakes are awesome and tasty ! So let’s make a lemon bundt cake 🙂

For 1 lemon bundt cake :

  • 170g flour
  • 170g butter
  • 170g brown sugar
  • 2 tsp baking powder
  • 3 eggs
  • 2 lemon :
    • Zest of 1 lemon
    • 1 and 1/2 lemons juice
    • 1/2 lemon to decorate

For the icing :

  • Powdered Sugar
  • 1 tsp lemon juice
  • 1 cc vanilla extract (optional)
  • Water

Preheat the oven to 180°C.

Beat the sugar and soft butter together until pale and fluffy. Add the eggs one by one, while mixing, ,then add the flour and baking powder. Gratte the skin of one lemon and juice the lemons. Add them to the batter and mix one last time.

Pour the batter into the bundt cake baking pan and bake for 35 to 45 minutes. Let it cool and prapare the icing.

Put some powedered sugar in a bowl with 1 tsp of lemon uice and the vanilla extract. Mix and add a little bit of water. If it gets too liquid, add more sugar, and if it is too thick, add some water. It must be pretty thick to be visible on the cake.

Then spread it on the cake and let it rest a bit. Decorate with some lemon and serve 🙂
