Cupcakes ! Chocolate cupcakes, even 🙂 They were the first pastries I really photographed and they are so delicious that I made them for every event. It was only logical that it would be my first recipe on the blog.
With these chocolate cupcakes, I became THE baker of the family. They were my specialty for a long time.
They are sweet, soft and light, even with buttercream on top of them.
So let’s make some cupcakes !
For the cupcakes :
Preheat the oven to 160°C.
Mix the cocoa powder with the boiling water until it is well dissolved.
Take 1/4 of this mixture, add eggs and the vanilla extract, then mix.
In another bowl, mix the flour, baking powder, sugar, salt together. Add the butter and the rest of the cocoa + water and mix again.
Add the first mixture with the eggs and mix a little bit stronger.
In a muffin tin, deposit cupcakes cases and fill two third of each with the batter (they will get bigger!).
Bake for 20 minutes. Test with a knife : if it goes into the cupcake and come out clean, then they are ready.
For the buttercream :
Melt the chocolate and let it cool for 10 minutes.
Whip the butter (with and eletric whip, it is so much easier). It must get creamy, without any chunk. Then add the cream, mix, and add the melted chocolate, little by little.
Put it in an icing bag and spread it nicely on top of each of the cooled cupcakes. Be generous, you have enough for every cupcake 🙂
