Here is an zero waste recipe for you : radish greens pesto ! As we are all confined home, it is important not to waste anything, now more than ever. I like cooking seasonal food and radish are coming back to the shops (yeay spring) and I propose that you use the greens to make a pesto. Tempted ? Try it 🙂

This recipe has all benefits : a new way to eat pasta, nothing to throw away, easy and fast to make, no cooking required (other than actually cooking pasta) and few ingredients.

I don’t use Parmesan cheese because I prefer my pesto that way, (but you can if you want) and because it makes it a vegan recipe. And i like eating vegan food 🙂

So let’s do this !

pasta radish greens pesto

For 4 servings :
  • 90g pasta per person (360g)
  • 150g radish greens (1 bunch)
  • 80 mL olive oil
  • 30g sunflower seeds
  • 2 garlic cloves
  • Salt, pepper

Wash your radish greens well. Remove the biggest stems.
Mix everything together (greens, garlic, sunflower seeds) untel you get a paste.
Season to your taste (salt, pepper)

Cook your pasta, drain it then assemble the pasta with the pesto.
Serve immediatly, it’s good while it’s hot.

You can spead some sunflower seed on top of your plate for crunch and decoration 🙂
